Recipe for Sicilian style ''Beans & Greens":
Ingredients:
1- 15 oz can Garbanzo beans ( you can also use butter beans, kidney beans, cannelloni beans)
1/2 lb baby greens ( baby kale, baby spinach, baby arugula)
2 slices Pancetta or bacon - rough chopped
2 cloves of garlic - slices thin
salt / pepper to taste
1/2 tsp red chili flake or more if desired for extra heat
2-3 tbls extra virgin olive oil
1/2 fresh squeezed lemon juice or balsamic vinegar
Instructions:
In large sauté pan heat oil
Add pancetta to brown 1-2 min
Add garlic- toast but careful not to scorch will cook quickly
Add garbanzo beans - toss
Lower heat , carefully add washed greens, incorporate ingredients, cover and let greens wilt for 2-3 minutes, not overcooking (should be beautiful, evergreen color)
Add fresh squeezed lemon juice or vinegar and serve
