Recipe: black bean, corn, and feta dip

Ingredients:

  • 2 cans black beans, drained and rinsed
  • 1, 16 ounce bag of frozen corn, thawed and drained
  • 5-6 green onions, sliced
  • 6 ounces crumbled feta cheese
  • 1/3 cup white balsamic vinegar
  • 1/3 cup olive oil
  • 1-2 tablespoons honey
  • Salt and pepper to taste

Instructions:

In a large bowl, stir together the black beans, corn, green onions and feta. In a separate bowl, stir together the white balsamic vinegar, olive oil, honey, and salt and pepper to taste. Pour the dressing over the bean and corn mixture and stir to combine. Chill for a couple of hours. Serve with tortilla chips.
