German Potato Salad-Presented by Olivia Sipe, Miss Olivia's Restaurant
Ingredients:
3 cups diced cooked potatoes
4 slices bacon
1/2 cup chopped onion
1/4 cup vinegar
2 tablespoons water
3 tablespoons sugar
1 teaspoon salt
Pepper to taste
Directions:
In a heavy skillet, cook bacon until crisp. Remove from skillet and drain. .
Add onions to the drippings and cook until tender. Add remaining ingredients. Bring to boil. Pour Over warm potatoes. Toss gently to coat. Chop reserved bacon and sprinkle over top.
I wash, dry and toss potatoes in melted butter. Salt lightly. Roast until tender.
