As you gather the blankets and popcorn to watch Dolly Parton's new Netflix movie -- Dolly is looking out for you and sharing her 'Chicken and Dumplins' recipe.
Ingredients:
1 (3-pound) stewing hen
2.5 teaspoons salt
3/4 teaspoon pepper
1 onion, peeled and left whole
1/4 cup chopped celery leaves
2 cups all-purpose flour, plus extra for kneading
1/2 teaspoon baking soda
3 tablespoons vegetable shortening
3/4 cup milk
Combine chicken, 2 teaspoons of salt, and 2 quarts of water in a dutch oven. Cover and bring to a boil.
Reduce heat to medium, add pepper, onion, and celery leaves. Simmer chicken until it falls away from the bone.
Remove the chicken and onion from the pot and strain. Discard the onion and celery leaves. Set the chicken aside to cool.
When cooled, remove chicken from bones and cut into 1-inch pieces. Set aside.
Discard skin and bones. Raise heat to high and bring broth to a boil.
Combine flour, baking soda and the remaining 1/2 teaspoon of salt in a medium bowl.
Cut in shortening until mixture resembles coarse crumbs. Gradually stir in milk until moist and turn dough out onto a floured surface and lightly knead about 5 minutes.
Roll out to 1/2 inch thickness and cut into 1.5 inch squares. Drop dough into the boiling broth.
Reduce heat to low, cover, and cook for 10 minutes.
Stir gently.
Add chicken back to the pot and stir until it is heated through. Serve warm.
