INGREDIENTS:
1 Quart Vanilla Ice Cream or Whipped Topping
3 Medium Peaches – firm but ripe. Peeled, pitted, and cut in half
¼ cup Brown Sugar
1 TBSP Sugar
½ tsp. Ground Ginger
1/8 tsp. Cinnamon
¾ cup Balsamic Vinaigrette
½ cup Fresh Blueberries
12 Fresh Strawberries cut in half
DIRECTIONS:
Mix Brown Sugar, White Sugar, Ginger and Cinnamon together in a bowl. Sprinkle mix on Peaches and drizzle with Balsamic Vinaigrette.
Prepare either a Grill Pan or BBQ Grill over medium / high heat. Brush grill with oil.
Place Peaches on Grill and do not move them so they will have grill marks for approx. 2 to 3 min on each side (5 to 6 min. total) until slightly softened & heated through.
Toss Blueberries and cut Strawberries in Vinaigrette and grill until marked.
Place Peach in center of plate and top with Ice Cream or Whipped Topping.
Place Blueberries and Strawberries around edge of plate and garnish w/ fresh Mint Sprig.
