Fresh From the Garden Green Tomato Casserole

You can't beat a good summer casserole--and this one is fresh from the garden.
Green Tomato Casserole from Museum of Appalachia

8-10 medium to large green tomatoes (chunked)

1 large onion (diced)

2 cups shredded cheddar cheese

Salt Pepper

Tabasco Sauce

2 sleeves Ritz crackers (crushed)

1 stick butter (melted)

Preheat Oven to 350 degrees

Grease casserole dish

Layer chunked green tomatoes in bottom of dish

Top with a handful of onions

Sprinkle with salt and pepper

Add a few dashes of Tabasco sauce

Cover liberally with shredded cheese

Repeat layers

Mix crushed Ritz crackers and melted butter

Top casserole with Ritz cracker mixture

Bake at 350 for about 45 minutes.
