Ye Olde Steakhouse Prime Rib Chili

Ingredients for Chili

3 Tablespoons Vegetable Oil
2 Medium Yellow Onions, Medium Dice
1 Tbs. Granulated Garlic
1 Tbs. Cumin
1 Tbs. Chili Powder
1/2 Tsp. Kosher Salt, plus more if needed
1 1/2 lbs. Lean Ground Beef
1/2 pound prime rib, Diced (Or other tender steak of your choice)
1 28 oz. Can Diced Tomato
1 small can Rotel Chili Fixins
2 (15 oz) cans Bush Chili Pinto Beans
2 (15 oz. Can Bush Dark Red Kidney Beans
1/2 can of Bush Northern White Beans.

For Serving: (Optional)

Heat the oil in a heavy bottom stock pot over medium heat until shimmering. Add the onions and season with salt, and cook, stirring occasionally, until softened, about 8 minutes.

Add half of the garlic, chili powder, and cumin, stir to coat the vegetables, and cook until fragrant, about 1 minute. Add the ground beef, prime rib and measured salt, the other half of remaining seasonings and cook, breaking the ground beef into small pieces with a wooden spoon, until the beef is no longer pink, about 10 minutes. Drain grease off of beef mixture.

Add the diced tomatoes, Rotel, beans and all their juices, and stir to combine. Cover and cook on medium low heat until the chili thickens and the flavors meld. Another option is to transfer to a crock pot and let slow cook for about 8 hours or 6 hours on high.

Second Harvest Food bank, Bush Brothers & Co. and Kroger have partnered up for the 9th annual East Tennessee Chili Cook-off on Sunday, November 2 at World's Fair Park. Event runs from noon until 6pm. For more information visit www.secondharvestetn.org
