Ingredients:
1 dozen Crooked Road Farm fresh eggs
2 Tablespoons Coarse Ground Mustard
3 Tablespoons Mayonnaise
½ bunch green onions, thinly sliced
1 teaspoon salt
½ teaspoon pepper
6 egg whites
1 cup corn meal
1 quart homemade chow chow
oil for frying
Directions:
Boil eggs for 7 minutes. Drain, peel, slice eggs in half longways and remove the yolk.
Blend yolk with mustard, mayo, onions, salt, and pepper.
Beat egg whites until stiff peaks form. Dip cooked egg whites in beaten egg whites and then in cornmeal, coating lightly. Fry in hot oil until golden brown.
Fill fried egg white with a pinch of chow chow, top with egg yolk mixture and enjoy!
