KNOXVILLE, Tennessee — Cake:
1 Duncan Hines devil's food cake mix
1/2 Duncan Hines spice cake mix
1 small instant vanilla pudding
5 eggs
3/4 cup of oil
2 cups buttermilk
Mix all ingredients and bake in three 9 inch pans at 350° for 22 minutes. Remove and cool completely.
Icing :
12 ounces of cream cheese softened
1 1/2 sticks of butter softened
4 1/2 cups of powdered sugar
2 teaspoons of vanilla extract
Ice cake between layers and lightly on the sides.
Garnish with frosted fruit.
To make frosted fruit, use 1/2 cup sugar and 1/2 cup water heated in a small sauce pan. Once it's dissolved, remove from heat and coat all fruit that you are using for garnish. Let drive one hour then sprinkle with additional granulated sugar.
