Polenta with Creamed Spinach

1 tube of polenta, cut into slices

3-4 cups fresh spinach

1/4 c. heavy cream

3-4 T. Parmesan cheese

Garlic to taste

Olive oil

Fry polenta in about 2 tsp. olive oil until cooked through. Remove from pan to serving dish.

Place spinach in pan and stir until cooked down. Add cream & cheese and stir until fully cooked and creamy.

Place spinach on top of polenta and serve!
