Ingredients:
1 box “Jiffy Mix”
1 cup cornmeal mix
1\4 cup oil
2 eggs
½ cup milk
1 can pinto beans, drained and rinsed
1 medium onion, diced
¼ cup chow chow relish (optional)
Directions:
Preheat oven to 350 degrees. Stir together Jiffy Mix, cornmeal mix, oil, eggs, and milk until no dry mix remains. Add pintos, onion, and chow chow, stir until incorporated. Fill well-greased mini muffin tins to the top. Bake for about 25 minutes, until golden brown. Makes 36-48.
Optional: top with sour cream and green onions OR a red pepper jelly
- You can also pour mix into larger muffin tins for bigger “bites”! Just bake a few minutes longer!
