KNOXVILLE, Tenn. — Basic Pasta Sauce
2 teaspoons oil
2 cups chopped onion
1/2 each green, red and yellow bell peppers, diced
8 cloves garlic, very finely minced
4 tablespoons balsamic vinegar
2 tablespoons sugar
4 teaspoons dried basil
4 tablespoons tomato paste
1 tablespoon dried Italian seasonings
Salt and pepper to taste
2 (29 ounce) cans diced tomatoes
In a large Dutch oven, cook onions and peppers in oil till tender. Add garlic; Cook about one minute. Stir in vinegar and remaining ingredients. Bring to boil; reduce heat and simmer about 15 minutes.
