Insalata Rustica (Peasant Salad)
(4-6 servings)
1/2 bunch romaine lettuce
1/2 bunch escarole
4-5 red potatoes
5 strips of bacon
1/2-1 small red onion, sliced
Sliced, hard salami, quartered
Salad Dressing:
1/3 cup extra virgin olive oil
2 T. white wine
Fresh lemon juice, from 1 lemon
1 clove of garlic
1 T. dijon mustard
Salt, pepper
Method: Put potatoes in cold water. Bring potatoes to a boil then reduce heat, until they're tender but not too soft. Let them cool, then slice them and set aside.
Cook bacon until crisp, let rest on a napkin, then break into pieces.
Rinse Romaine and Escarole, then pat dry and pull apart into small pieces.
Mix and place lettuce in a salad bowl, add potatoes, bacon, salami & red onions. Mix well.
In a small blender, mix olive oil, lemon juice, wine, garlic clove, mustard and salt & pepper. Blend until smooth.
Pour dressing over salad. This is hearty and healthy!
