Cheese Pupusas

Just ask someone who's eaten one--they'll tell you how delicious this traditional El Salvadoran dish can be!

KNOXVILLE, Tenn. — Cheese Pupusas

A traditional El Salvadoran dish of a filled flat tortilla.  If you ask someone that has had them about pupusas, they will inevitably smile and talk about how delicious they are. The trick is forming the dough with the filling inside.

INGREDIENTS:

2 cups Masa Flour (available in any grocery store)

1 tsp Salt

1 1/2 cups Lukewarm Water

1 cup shredded Mozzarella Cheese

Oil for pan

Combine masa and salt in a bowl, gradually drizzle in water, working it bit by bit until the texture resembles play-dough. (Water amount is approximate)

(If using a cast-iron skillet, preheat your skillet now. If using a non-stick pan, there is no need to preheat the pan.)

Break off about 1/3 cup of dough at a time and form into a ball, flatten and form into a bowl with your hand. Fill with about 1/4 cup of cheese and gradually close the dough back into a ball. Flatten with your hands, then place between two pieces of plastic and flatten more with the bottom of a cutting board until about 1/2” thick.  Grease pan slightly and place pupusa on to cook; when the edges seem a little dry, flip and finish cooking. 

Traditionally served with curtido, a traditional vinegar cabbage and carrot slaw. I like mine with eggs. Fillings can be almost anything - meat, beans, vegetables, etc. Fillings just need to be dry and well chopped.
