Betty's Lemon Cookies

Ingredients:

2 sticks butter - softened

3/4 cup sugar

2 teaspoons lemon extract - divided

2 cups plain flour

1/2 teaspoon baking powder

1/4 teaspoon salt

2 cups powdered sugar

4 - 5 tablespoons water

Directions:

Beat butter, sugar, & 1 teaspoon lemon extract together until fluffy. Add the salt and baking powder and mix well. Gradually add the flour and beat until combined. Using a cookie scoop place 12 balls onto cookie sheet. Dip a flat-bottomed glass or cup into sugar and flatten each cookie ball to 1/4" thick Bake at 400 degrees for 7 - 9 minutes. Let cool. Meanwhile, make the icing by whisking together the powdered sugar & 1 teaspoon lemon extract. Gradually add the water 1 tablespoon at a time until you have a glaze consistency. Spread the icing over the cooled cookies. Allow the icing to set and serve or store in an airtight container. Makes about 40 cookies.
