Almond Cake with Pistachio Icing
Cake:
1 1/2 French vanilla cake mixes
5 eggs
3/4 cup oil
1 1/2 cup almond flour
1 1/2 tablespoon almond extract
Icing:
2 sticks of butter
16 ounces cream cheese
6 cups powdered sugar
2 boxes instant pistachio pudding
4 tablespoons milk
Directions:
Combine all cake ingredients and mix on medium speed. Pour into 3 9-inch round cake pans that have been lined with parchment or wax paper. Bake at 350 degrees for 20 minutes. Cool completely.
Mix softened cream cheese and butter in a mixing bowl. Mix well. Add powdered sugar one cup at a time. Mix in pudding and add milk to make fluffy. Garnish with edible flowers.
