Summer Squash Soup

2 tablespoons butter
1 cup diced celery
1/2 cup chopped onion
1/4 cup shredded carrot
2 cloves garlic minced
3-4 medium-sized summer squash, diced
1-2 small zucchini, diced
3 cups chicken broth
1 tablespoon Italian seasonings, or to taste, Salt and pepper to taste

Grated cheese for garnish

In a large, heavy saucepan, melt butter. Add celery, onions, and garlic. Add seasonings. Cook and stir until vegetables are tender. Mind the garlic doesn't scorch. Add squash and cook until tender. Add broth. Bring to boil, reduce heat and simmer about 10 minutes. Add cheese or serve it on the side.
